Key responsibilities include:
- Menu Development & Culinary Innovation: Ensure high-quality, authentic, and consistent Japanese dishes, managing food preparation processes for flavor, presentation, and portion control.

Kitchen Operations & Quality Control: Oversee daily kitchen functions, maintaining food safety standards, managing costs, and ensuring efficiency in food prep. Conduct quality checks and handle kitchen staff scheduling.
Financial & Inventory Management: Control food and labor costs, work with management on pricing and budgeting, build relationships with suppliers, and manage inventory to maintain freshness and prevent waste.
Customer Engagement & Experience: Ensure an exceptional dining experience, engage with customers, address their concerns or requests, and promote the restaurant's culture.
Leadership & Team Management: Recruit, train, and mentor the kitchen team, foster a positive work environment, handle performance evaluations, and manage staffing.
Additional Responsibilities: Travel to external catering events, uphold food quality and service standards, and align operations with business goals, while taking on any other assigned duties.
about the manager/team
You will be reporting to the General Manager / Director
skills and experience required
- Culinary Arts degree or equivalent experience in Japanese restaurants.
- Proven leadership experience as a Head Chef, preferably in Japanese cuisine.
- Solid knowledge of Japanese culinary methods, kitchen operations, and food safety standards.
- Strong ability to manage kitchen operations, control costs, and ensure profitability.
- Excellent time management, problem-solving, and organizational skills.
- Ability to train, motivate, and lead a dynamic team in a fast-paced environment.
- Meticulous attention to quality, consistency, and presentation of all dishes.
- Strong verbal and written communication skills.
- Ability to work flexible hours/shifts, including weekends and public holidays.
- Fluency in the Japanese language is a plus, as laision with Japanese speaking countercourts / suppliers are required
